My husband and I opened Gallo Pizzeria in San Antonio, TX. We offer delicious pies of all kinds and a huge variety of toppings. We also specialize in pizza picosa!! Some new menu items, SAUSAGE! and a coupon for you ;)



Our Crazy Delicious Greek Salad



Hello Fellow Pizza-Lovers!

We are adding the following menu items in the next few weeks:




- Crystal's Pizza Buns (you cannot imagine how delicious they are)


- Angel's Naco Pizza (It's like a taco, but better)


- Joe's Barbecue Pizza (Pizza+Barbecue Chicken = Total Heaven)

We have three kinds of sausage right now and they are so, so tasty. We're still serving a regular Italian sausage, but we are also offering for a limited time as a topping our Jalapeno sausage and Italian, spicy sausage. The Italian spicy sausauge is tremendous and is also pretty tasty as a topping on the ravioli. You can pretty much put anything you want on the ravioli for an extra charge. Also, you can put anything you want on the salad. Just a dollar extra per topping. I like bell pepper with my Greek salad; it just adds that extra zing. Maybe some day, I'll even try some habanero on my salad, when I'm feeling daring.

Gluten-Free San Antonio!

I’ve been thinking a lot about nutrition and the health of our friends and our customers. We pride ourselves in the lack of grease in our foods, we use the freshest of vegetables and toppings, and we also offer a super healthy Greek salad with tomatoes, cucumbers, red onions, and kalamata olives and a hearty Greek dressing. But I’m starting to think outside of the box.



Our friend Kat discussed gluten-free crusts with me early on and this is definitely something that has our interest. So many of our friends have been affected with Celiac disease, and we would like to offer a delicious product that will be available to them, as well.



One of our other very close friends has recently been battling with gallbladder issues. She can’t have cheeses anymore, and I’m looking into cheese alternatives. My dream at this point is to develop a pizza for those who can’t enjoy the cheese and crust that so many of the rest of us take for granted. It can also be an option for those times when we’re trying to go easy on the pizza (I eat pizza almost EVERY day, so I’m not in that place LOL, but at some point I'll take another break from my constant pizza diet).

I’ve also got paninis and bagels on the brain. When I lived in New York (and I know Jeremiah’s going to groan when he reads this because I always go on about NY – sorry, Mack, it’s a great city, too, ya know!), it seemed incredible paninis and bagels were everywhere.




Every corner – bam – delicious paninis! I’ve looked into industrial panini grills and they are *NICE* I’m thinking the first panini I make will be comprised of tomatoes, mozzarella, and spinach. OM NOM NOM. Did I mention we’re also looking into making our own mozzarella? We’re crazy that way.
Going back to NY (how I heart you NY), I want to stress what we always forget, living here in the biggest small town known to man. San Antonio…
... is AWESOME in its lameness. We are great-hearted, big-spirited people, who know how to have fun. And we have SPURS! I love my city more than I can express.

I have a lot of pride in our city, and especially in its people. Our customers prove every day to me the greatness and the kindness of our people.


We'll keep you posted about our gluten-free journey and we'll definitely run a special on the pizza when it first arrives. Trust me, it will be the most delicious, financially-friendly gluten-free pie you will be likely to have in the city - I'll make sure of it. Some of you have also asked for juices and milk, and we're working on that one, too. Milk especially will serve those who try the Diablo!

SA Living, A little Discount for you, and HOT STUFF





So this may have been the most exciting week of our culinary careers (next to Halloween 2011, which was awesome madness!!) We shot a commercial with WOAI, we met some amazing, super-friendly people, and Mack was interviewed on SA Living. Alana Sarabia was such a total sport and so brave! Birthday Fun, Moonwalking, Delivery, and De-Stress!


Today, we had a huge, terrific party for a little angel's birthday party. They brought in a cotton candy machine and a bouncy moonwalk from Vengie's Party Rentals. That thing is incredible - and, yes, both Mack and I took turns in it and somehow managed not to stomp on any children LOL. I have decided if we ever have a big backyard and some money to throw away, I'm investing in a moonwalk - it's a trillion times more fun than a trampoline. By the way, Mack just came into the office and asked me, "What's the name of that German Swedish guy who sings with a stick?" I have no idea what he's talking about, but moving on...

Today has been great, and I'm truly happy we started opening on Sundays. It was nice to have that day of rest while it lasted, but it's much better to see your smiling faces when you walk in. Something about Sunday just makes everybody rested and happy. We're open Sunday 1 - 9 pm if you ever want to drop in. If you're lucky Jeremiah and I might duet Beatles songs for you on the piano... or if you unlucky we might duet Beatles songs for you on the piano..

We're also starting to execute delivery; little by little we're figuring out what we're doing with it and how we're going to do it. We'll definitely keep you posted on that!

Babies, Big Red, and Greek Salads


Opening a restaurant is kind of like having a baby ... minus the tremendous physical pain, though there is still a lot of crying and sweating. There is a sense of pride in it, a sense of belonging, and there is definitely love. We laid every tile, we painted every one of our old benches, we hand-selected every knick knack. It is both our home and our gift, and the people who visit us start to feel like family. Sometimes, a customer will walk in and I wish I weren't working so I could just sit down and have a Big Red and a salad with them!

I may not be able to sit and eat a delicious salad with you, but I can certainly serve you one! Greek Salads are on sale this weekend (we are open Saturday AND Sunday)!!

Meet the Greek salad: it wears only the finest of dining couture! Juicy cucumbers, fresh red onions, chunks of tomato, and crisp romaine lettuce and all of this garnished with the most delicious hat made this season - feta cheese, kalamata olives, pepperocinis, and oregano. You can pair it with our Greek dressing, but we also offer Ranch and Italian.





I am a bit of a strange one, so I like to order the Greek pizza (we call it Al Greco) AND the large salad, and just throw salad and Greek dressing all over my pizza and eat it that way. That is my current idea of heaven, next to a nice cup of coffee and Steven's brownies. I'm thinking of getting a coffee machine at the restaurant because I love coffee almost as much as I love brownies almost as much as I love salad and pizza... almost as much as I love our customers :)

New Years Resolutions




I've found a time window to blog and I'm taking advantage of it! It's been a lovely day. Mack and I ventured to Guadalupe Lumber Company for a quick search - we were looking for a laminate to turn into a dry erase board (success!) We haven't been to GLC in a while and it was a pleasure, as always. Love that place.

Some of Mack's family came to visit, as well, and helped us organize our office and our lovely 'specials' board.



In between I had one of those stressful, teary moments after which you wonder why the heck you were so upset. Mack asked me what was wrong and my response in a soppy voice was, "I DON'T KNOW!!!" I think it's one of those moments where exhaustion kind of takes over. There's plenty of time to rest no matter what you do - it's just a matter of managing your time (new mommies are, of course, excluded from this rule); sometimes I forget this and push a little bit too hard. We all always must remember to breathe and take time to meditate and be quiet. Quiet is invaluable; I think I don't take enough quiet because I'm so in love with the noise. The bustle of a busy room, the sound of children giggling, the sweet hum of the vent-a-hood when a pizza is being born. It's all grand.



Speaking of things being born, the year 2012 was born a few days ago. It's a brand spanking new year and chances are we've misunderstood the Maya calendar (as we do most things) and we'll all go on living and exploring through this year and in to the next one. Resolutions are tricky things because they're innately filled with the promise of future guilt. If we don't lose that pesky ten pounds or write that book we've been toying around with or keep the kitchen clean all year, then we might punish ourselves later in the year (please note those - such as myself - who are trying to lose ten pounds, our Greek salad is super healthy for you LOL). Maybe we should resolve just to be good to ourselves and to those we love. And eat lots of pizza AND Greek salad!!!

I resolve today to feature the Chanchi Pizza. The Chanchi is an amazing concoction derived by my cousin Sandra. We sprinkle a healthy helping of mozzarella cheese over some flavorful bean sauce and then add red onions, black olives and creamy avocado. Of course, there are variations. We have one customer who likes us to throw on chicken marinated in Salsa Louisiane, and sometimes I like the Chanchi with the Salsa Mexicana rather than the bean sauce. It's ALL good ;)
